This soup will is perfect for those cold winter days when you want something to warm your body.

Instructions

Place beetroot, lime juice, dried apricots, red onions, garlic, cumin, paprika and vegetable stock in a large saucepan. Bring to the boil, then cover and simmer gently for 45 minutes.

Transfer mixture to a food processor and blend until smooth.

Add Orange Juice, and season to taste with salt and pepper

Garnish with chopped coriander
